Cookies and Cream Cupcakes

OK – I know that I post lots of devos, and I rave about my kids alot.  So, to mix it up a bit, it’s time for a decadent, not good for you, WONDERFUL cupcake that I just put together this evening.  It all starts with these ingredients:

1  devils food cake mix

1 family size package of Oreos

1 recipe for “Twinkie Filling”

1 recipe of “cookies and creme icing”

First off –

Whip up the cake mix, just like it says to on the box. Then line your cupcake tins with papers, and add a oreo flat in the bottom of the tin. Yes, a WHOLE oreo.  Then fill the cupcakes just like you would for baking.  I filled mine a little higher, I like them to be tall.

While your cupcakes are baking – 

Make up this recipe for icing:

  • 1 Cup of milk
  • 5 Tb. of flour

Cooked in a sauce pan till really thick.  Then set it to cool in the fridge.  (I know, flour?  in icing?  but trust me it works!)

While your flour is cooling – Beat the devil out of 2 sticks of butter and a cup of sugar.

Then after the flour mix is cool, beat them both together.  It should look alot like whipped cream when it is beaten enough.  If you stop and it doesn’t look like whipped cream, KEEP BEATING.

After you have the icing thick, crunch up a handful of oreos and mix them in with the icing. Then put the icing in a ziploc bag and in the fridge until we are ready to use it.

Now for your twinkie filling –

Beat together (again with the beating…) all these ingredients.  It will look like Twinkie filling and taste like it too!

  • 1 stick salted butter, slightly softened
  • 1/4 cup heavy cream
  • 1 tsp vanilla
  • 7 oz jar marshmallow creme
  • 3 1/2 cups powdered sugar

When you get the filling done put it in a ziploc bag and put it in the fridge until you are ready to use it.

When your cupcakes are completely cool – 

Take a spoon (I use a baby spoon) – and pull a small hole in the center of each cupcake.  Take the ziploc bag of twinkie filling and clip the corner off.  Now, fill up those cupcakes.

Then  take the bag of cookies and creme icing and cut the corner off of it as well, swirl a generous amount of icing on top of the cupcake, covering the hole where you filled it.

Place a whole oreo in the top of the cupcake as a garnish and enjoy.
